“When in Rome, do as the Romans do”, they say. Could we land into one of Europe’s top capitals of fashion, design and pop art food ignoring the sacred tradition of Aperitivo Milanese? For the occasion, we have found the perfect partner in crime: Berberè. Salvatore and Matteo Aloe reveal the special recipe they have designed for The Milan Coffee Festival and explain what it has in common with quality coffee.
"The special pizza that we will present at The Milan Coffee Festival combines black cabbage, mortadella, asiago, fiordilatte and mustard. We have used selected ingredients, produced by the best artisans in the Italian gastronomic scene."
Recently the two entrepreneurs have developed a passion for specialty coffee – especially Matteo. “It's amazing how much the two worlds have in common! We also select the ingredients by hand, establishing a direct relationship with local producers. We choose the best grains, to turn them into semi-whole and organic flour. The processing is artisanal and slow, respecting the times of leavening and cooking. We want the dough to be well cooked, soft inside and crunchy outside, soft, light and digestible. From poor quality ingredients you will never get a good pizza!
Many people ask us why our pizza is served cut into eight slices. The answer is simple: pizza, like coffee, should be shared!"
